Build table

I would like to ask for your opinion regarding the wood on the build table. The steel is built strong and now I'm about to cover the top with wood.
What kind of sheets would most likely be as straight as possible from start? Plywood, MDF or maybe some other sort?
I have 20 mm Plywood in the house that i were supposed to use but it seems like its been damaged by moisture so it will not do.
So i was thinking if i have to buy new sheets, which kind would be best for this application?

I used MDF for mine, as thick as you can afford within reason (I went with 18mm). Very happy with the result, screws for jig blocks held well, mark out lines were clear, very smooth surface to work on. Be aware it is heavy. Mine is around 250kg without the base frame! I believe any engineered "wood" will be susceptible to moisture over the life of the build so careful with quenching welds with water or tipping drink bottles etc. I also have a recollection MDF is banned in USA due to the chemicals they use in the glue??? So take care when drilling/cutting etc.

I too used MDF for my table. 18mm again, and although it was quite a bit more expensive, I went with the largest sheets I could find to avoid having any joints as well as getting the ‘moisture resistant’ variant.

I too used MDF for my table 21mm from Optimera, got it cut and ready.
